Ingredients:
2 cups cooked red quinoa
2 large eggs
3 Tbsp finely chopped onion
2 cloves garlic, minced
1 tsp dried cilantro
1/2 cup grated Parmesan cheese
1 Tbsp whole wheat flour
1/2 tsp seasoning salt
1/4 tsp freshly ground pepper
1/2 a jalapeno, finely chopped (or more to taste)
Directions:
1. Preheat oven to 350F.
2. Mix together all the ingredients. Distribute mixture into a greased muffin tin, filling each cup about 1/3 full.
3. Bake for 15-20 minutes. Enjoy!
